SWEETCORN FRITTERS
Unless you have an enormous pan you`ll have to cook these in batches.
If you cram too many fritters in the Pan at once, they with spread a little
And then stick together. Makes 10-12 good-sized fritters
Ingredients
- 4oz/100g pain flour
- 1/4 tsp baking powder
- 1/4 tsp caster sugar
- 1/4 tsp ground mace
- 1 egg, lightly beaten
- 3ft oz/90m1 milk
- 2oz/50g tinned/frozen sweet corn
- Kernels
- Unsalted butter or oil for frying
Method
1. Sieve the dry ingredients into a bowl. Add the egg and about 3 quarters of the milk. Mix well and add the remaining milk to make a smooth,thick batter. Mix in the sweet corn.
2. Heat a little butter or oil in a non-stick
Pan, then spoon in the batter,
a dessert spoonful at a time, frying
gently for about 1-2 minutes, until the
surface appears silky. Turnover and
continue cooking for about a further
1-2 minutes until on golden brown.
3. Lift out and lay or kitten paper to cool. Repeat with the remaining mixture. Divide into portions and serve or freeze.
4. When needed, defrost and reheat for 5 to l0 minutes in an oven preheated to 180°C. 350°F.
